Preheat oven to 425 degrees. Place the oil in a 9 in by 13 in pan adn set aside. Then peel the potatoes and put them in a bowl of cold water (this will keep them from turning brown). After finely chop the onions and potatoes (cut into chunks) in a food processer with a metal blade. When done put into a bowl with the salt, pepper, sugar, and eggs (already wisked). Place the pan (with the oil) in the oven and when the oil sizzles take it out and CAREFULLY pour the batter into the pan. Bake with the pan uncover for an hour.
